Ilve BC645SLTC blast chiller

The Ilve BC645SLTC blast chiller is part of the Professional Plus line , a collection of appliances inspired by the kitchens of the best restaurants, designed to bring great qualities of sturdiness, ergonomics and operability into the domestic space, also thanks to the AISI 304 stainless steel structure, among the best types of steel on the market thanks to its excellent resistance to humidity, corrosion and wear over time.

Appliance reserved, until a few years ago, for use in professional kitchens, today the blast chiller is also used in home kitchens, to quickly lower the temperature of food and preserve food in an optimal way , avoiding   bacterial proliferation and thus reducing waste. With the blast chiller, in fact, it is possible to switch in a very short time from the heat of the oven to -3°C (refrigerator), or from room temperature to -20°C (freezing). In fact, if cooked and cooled quickly, foods retain their organoleptic properties for 5-7 days; if frozen quickly, defrosted food retains its original texture and flavour.

The BC645SLTC blast chiller is a built-in stainless steel model from   capacity of 40 liters , and is equipped with 11 functions , namely:

- CHILLING
This function allows the core temperature of a freshly cooked food to be rapidly reduced to +3°C, a useful level for interrupting the cooking process and preparing the food for subsequent handling. Reducing the permanence time of the food in the temperature range of proliferation of the bacteria lengthens the preservation time of the food itself.

- FREEZING
The freezing process rapidly brings the food to a temperature of -18°C using the micro-crystal technique. This mode avoids excessive loss of liquids and the consequent loss of weight in the subsequent defrosting phase. The procedure allows you to preserve food for several months. The organoleptic qualities, flavour, aroma and appearance of the foods are kept intact through the rapid solidification of the water contained, thus avoiding tearing the fibres.

- PRE-COOLING
Pre-cooling consists in cooling the internal parts of the equipment; by cooling the air inside the cell, the machine is ideally prepared for the blast chilling and freezing functions of even very hot foods, shortening the times of the subsequent cycles and reducing consumption. This process allows you to optimize working times in the kitchen because it takes place during the preparation of the recipes.

- COOLING DOWN
When it is not possible to consume freshly cooked food immediately because its temperature is too high, with this function it is possible to accelerate the cooling process of freshly taken food before consuming it, or to cool it rapidly for the preparation of other foods, without waiting for natural acclimatization.

- DRINKS
Keeping drinks at the desired temperature is the task of a wine cellar, however the blast chiller has performance characteristics that are very useful when you don't have enough time. This program allows you to reduce the temperature of a drink based on the time available; just indicate the number of bottles and the time. The internal ventilation will prepare them for the best tasting.

- STORAGE AT 0°C
This function has the purpose of preserving the organoleptic properties of raw foods and is suitable when you want to preserve foods such as meat, fish and vegetables for a few hours before their preparation, blocking and inhibiting bacterial proliferation.

- RAW FISH
Poor storage of fishery products can cause health risks in correlation with contamination by Anisakis, a parasite that can be eliminated with prolonged cooking or freezing processes and storage at -30°C (sanitization). This program uses the high performance of the blast chiller to reproduce the sanitization process at home. At the end of the cycle, it is kept at -18°C.

- DEFROST
The blast chiller manages the thawing phase of a food according to the "controlled air temperature" mode, which allows a food to be brought from the frozen temperature to that of 1÷3°C without losing liquids and without starting cooking . Progressively defrosting food allows you to keep the consistency and structure intact, avoiding the transformation of proteins that occurs, for example, with defrosting meat with a microwave.

- READY ON THE TABLE
This function allows you to reheat a food previously cooked and stored in the refrigerator and serve it on the table at the correct consumption temperature, or to program its availability at the desired temperature, postponing the heating of the food for up to 10 hours.

- SLOW COOKING
This function makes it possible to cook food slowly, at a constant low temperature for a specific time. It is the ideal cooking method for sous vide, because it allows you to safeguard the structure of foods by not subjecting them to high thermal stress and by not wasting their nutritional values.

- LEAVENING
With this function it is possible to leaven a dough by choosing three different operating modes: "Immediate", "Conserved", "Delayed". In each of them, the machine allows you to set the air temperature, duration and humidity level, for perfect leavening control. By programming the leavening duration it is possible to reduce the quantity of yeast, obtaining a lighter and more digestible product, at the same time favoring the development of the desired aroma.
